Yakitori and its sauce


Rie’s Yakitori Sauce

*for 2 medium size chicken breasts
Soy sauce  4 Table spoons
Mirin          3 Table spoons
Sugar        4  Tea spoons
Honey       1 Table spoon
Haccho Miso  1 Table spoon
(Haccho Miso is a dark miso from Nagoya. If you do not have
Haccho Miso, you can use Chinese sauce for Peking Duck or
Sweet Bean Sauce called Tian mian jiang)
Chicken Soup cube    1/2
salt and pepper

お醤油   大4
みりん   大3
砂糖    小4
はちみつ  大1
八丁味噌  大1 (甜麺醤でも代用可)
鶏ガラスープの素 小1


1. Put honey in the bowl. Add 1/2 table spoon of boiling water into the
honey. Add sugar and mirin and chicken cube. Mix miso and soy sauce
and add into the honey. Mix everything well. Put them in a pan. Bring to
a boil on medium high heat but be careful it gets burnt very easily.
Take it off from the heat. If it is slightly thickened it is ready.

2. Cut the chicken into a bite size. Sprinkle a little bit
of salt over themeat. Thread 3-4 pieces on each skewer.
Marinate the chicken in thesauce for about 30 minutes.

3. Heat the grill pan and grill the chicken.
Brush the sauce onto the chicken as grilling.

4. Serve with shredded cabbage on the side.

  1. It should be a dark kind of miso for this recipe. If you choose to use regular miso, increase the volume of honey and make it sweet that way. Dark Miso is sweet in taste compared to regular one for miso soup.
